Oatmeal Scotties
- 1 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. (2 sticks) softened butter
- 3/4 c. sugar
- 3/4 c. firmly packed brown sugar
- 2 eggs
- 1 tsp. vanilla extract or grated rind of 1 orange
- 3 c. quick or old fashioned oats (uncooked)
- 1 (12 oz.) pkg. (2 c.) butterscotch morsels
- Preheat oven to 375u0b0.
- In small bowl, combine flour, baking soda, salt and cinnamon; set aside.
- In large bowl, beat butter, sugar, brown sugar, eggs and vanilla extract (or orange rind) until creamy.
- Gradually beat in flour mixture.
- Stir in oats and butterscotch flavored morsels.
- Drop by measuring tablespoonfuls onto ungreased cookie sheet.
- Bake 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies.
- Let stand for 2 minutes.
- Remove from cookie sheets; cool.
- Makes about 4 dozen.
