Chocolate Eclair Delight Recipe
- 1 box graham crackers
- 2 sm. Packages French vanilla instant pudding mixes
- 3 1/2 c. cool lowfat milk
- 1 lg. container Cold Whip
- 3 teaspoon butter
- 2 sq. baking semi-sweet chocolate
- 2 tbsp. white syrup
- 1 teaspoon vanilla
- 3 tbsp. lowfat milk
- 1 1/2 c. sifted confectioners' sugar
- Line 9 x 12 inch pan with graham crackers.
- Combine pudding with cool lowfat milk.
- Whip till thick.
- Add in Cold Whip and mix till smooth.
- Spread half of this over graham crackers.
- Next follow with another layer of graham crackers.
- Fourth layer: pudding mix.
- Fifth layer: graham crackers.
- Final layer is chocolate mix.
- For chocolate mix: Heat butter and chocolate.
- Add in syrup, vanilla, lowfat milk and confectioners' sugar.
- Mix well and cold thoroughly.
- Spread over graham crackers and chill.
- This dessert is best made the night before.
