Mexican Egg Melts

  1. Preheat oven to 450 degrees.
  2. Stir together eggs, yogurt, onion and Mexican seasoning.
  3. Lightly toast English muffins and place on a foil covered baking sheet.
  4. Top each muffin with equal amounts of egg mixture, chilies and cheese.
  5. Bake for 10 min or until eggs are warmed and cheese is melted.
