Stuffed Bell Peppers
- 1 packages sausage
- 1/4 onion, chopped
- 1 packages 90 second rice (any flavor)
- 1/4 grated parmesan cheese
- 1 shredded cheese
- Cut off the tops of the peppers and hollow out the insides.
- Dice up the usable parts of the tops (you need them later).
- Make sure when you buy the peppers that they can sit up on their own.
- Saute the onion & diced pepper (that you saved earlier).
- They don't need to be cooked to death, just a little bit.
- Now brown the sausage into little crumbles.
- Preheat the oven to 375.
- Cook the 90 second rice (I used brown rice).
- Mix the rice, sausage, onion/pepper, & parmesan all together in a large bowl.
- Stuff the peppers with the mixture, fill 'em up!
- My mix got me 6 peppers.
- Bake for 30 minutes then remove & top each one with shredded cheese & bake for 10 minutes more.
