Diamond Lobster Rolls
- 6 hot dog buns, split
- 1 tablespoon soft butter
- 2 cups shredded romaine lettuce
- 2 tablespoons mayonnaise
- 1 teaspoon lime juice
- 1 clove garlic, minced
- 1/2 teaspoon chopped fresh basil
- 1 dash hot sauce (such as Tabasco(R))
- salt and ground black pepper to taste
- 1/2 cup diced red onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced celery
- 2 pounds cooked and cubed lobster meat
- 6 thin slices tomato (optional)
- 1/2 cup shredded Cheddar cheese (optional)
- 1/4 teaspoon chopped fresh dill
- Spread butter lightly over the insides of the buns. Transfer to a toaster oven; toast until light golden brown, about 5 minutes. Line toasted buns with romaine lettuce.
- Stir mayonnaise, lime juice, garlic, basil, hot sauce, salt, and pepper together in a bowl. Add red onion, red bell pepper, and celery. Fold in lobster gently.
- Stuff lobster filling into buns. Top with tomato slices and a light sprinkle of Cheddar cheese and dill.
