Lime and Gin Macaroons

  1. Preheat oven to 350.
  2. In a small bowl, whisk first 6 ingredients together.
  3. In a large bowl, toss coconut and flour together.
  4. Add egg white mixture to coconut mixture.
  5. Drop by tablespoons 2 inches apart onto greased baking sheets.
  6. Bake 15-18 minutes until tops begin to brown.
  7. Remove from pans to cooling racks and cool completely.
  8. Melt chocolate while cooling.
  9. Dip bottoms of cookies into melted chocolate and allow excess to drip off.
  10. Place on wax paper and let stand until set.
