Cheesy green chile chicken enchiladas
- 1 packages frozen grilled chicken
- 1 flour tortillas
- 2 cup chicken broth
- 4 cup monterey jack cheese
- 1 can diced green chilles
- 8 oz sour cream
- 4 tbsp butter
- 4 tbsp all-purpose flour
- 1 packages taco seasoning
- Cook frozen chicken for 15 min or until Brown.
- Add half of taco seasoning on cooked chicken.
- Let cool
- Mix 2 cups of cheese with the cooled chicken.
- Mix chicken cheese mixture on flour tortilla.
- Lay tortilla on greased pan.
- In a medium saucepan melt butter on medium heat.
- Than stir in flour.
- Whisk for about a minute.
- Add chicken broth Whisk until sauce thickens and bubbles.
- Let mix cool for 20 min.
- Pour sour cream into the mixture.
- Mix until creamy texture.
- Make sure it is cooled off or else sour cream will curd.
- Add can of green chilles.
- Pour over enchiladas.
- Bake at 350 for 20 minutes.
- Than broil for 3 minutes.
- Let cool & enjoy!
