Alfonso's Mincemeat Recipe
- 1 lb very lean beef or possibly venison cooked, and grnd or possibly minced
- 3/4 lb suet finely minced, or possibly grnd
- 1 lb black currants
- 1 lb golden brown raisins
- 1 lb dark raisins
- 1 c. minced glazed pineapple
- 1 c. minced glazed cherries
- 1 c. minced glazed mixed fruits
- 2 c. brown sugar
- 2 c. finely-minced peeled cored apple
- 1/4 c. fresh lemon juice
- 1/2 c. dry sherry
- 2 c. cognac
- 1/2 tsp grnd nutmeg
- 1 1/2 tsp grnd cinnamon
- 1/2 tsp grnd allspice
- 1/2 tsp grnd cloves Grated peel of 1 orange Grated peel of 1 lemon
- 1/2 tsp salt
- Mix all ingredients together and place in a large crock or possibly glass jar.
- Cover and let stand in refrigerator at least 1 month before using.
- If mix becomes dry at any time, add in more sherry.
