Braised Fish (Tunisia)
- 1 12 lbs cod or 1 12 lbs other white fish
- 1 tablespoon harissa
- 2 teaspoons olive oil
- 1 large onion, cut into rings
- 4 sun-dried tomatoes packed in oil
- 2 garlic cloves, sliced
- 1 cup white wine
- 12 teaspoon lemon juice
- Preheat oven to 375F.
- Clean and pat dry the fish.
- Cut into serving-size pieces.
- Rub fish with harissa.
- In an ovenrpoof skillet, heat the oil and add the onion.
- Saute until onion is transluscent.
- Add the tomato, garlic, lemon juice, and wine.
- Cook 5 minutes.
- Remove from heat.
- Add fish to skillet and spoon some sauce over the fish.
- Cover and cook in oven for 10 minutes or until cooked through.
- Remove from oven and let sit 2-3 minutes.
- Serve with couscous.
