Minestrone With Tortellini Soup

  1. Remove sausage from casings.
  2. In a 5 quart (or larger) pot brown sausage.
  3. Drain excess fat.
  4. Add onions.
  5. Saute until tender.
  6. Add beef broth, wine, tomatoes, carrots, catsup, Italian seasoning, garlic and celery.
  7. Bring to a boil.
  8. Simmer 30 minutes.
  9. Skim excess fat.
  10. Stir in zucchini, tortellini, green pepper, and parsley.
  11. Simmer 30 minutes, covered, or until tortellini are tender.
  12. Season with salt and pepper.
  13. Serve with grated parmesan cheese to sprinkle on top.
  14. Enjoy!
