Honey Walnut, Goat Cheese Cranberry Salad

  1. Preheat oven to 350F (180C).
  2. In a small bowl, toss chopped walnuts with honey, spread evenly on a baking sheet.
  3. Bake until walnuts are golden brown, about 20 minutes.
  4. Set aside.
  5. Meanwhile Whisk vinegar, mustard, oil and thyme in the small bowl.
  6. Season dressing with salt and pepper.
  7. Mix greens, cranberries, and onion in a large bowl.
  8. Mix in enough dressing to coat.
  9. Sprinkle with honey glazed walnuts and goat cheese.
