Cocoa Banana Mini Muffins
- 1 14 cups quinoa flour
- 1 cup quick-cooking rolled oats
- 12 cup light brown sugar
- 13 cup unsweetened cocoa powder
- 1 14 teaspoons baking powder 1/2 t baking soda
- 14 teaspoon fine sea salt
- 2 large eggs
- 23 cup mashed ripe banana
- 12 cup soymilk
- 14 cup coconut oil (or melted butter)
- 1 teaspoon vanilla extract
- 2 tablespoons icing sugar
- Preheat oven to 400*.
- In large bowl, combine dry ingredients.
- In medium bowl, whisk together eggs, bananas, milk, oil and vanilla until well blended.
- Combine egg and flour mixture and stir until just combined.
- Divide batter evenly among prepared mini muffin cups.
- Bake 10-12 minutes.
- Let cool and sprinkle with icing sugar.
