Red and White Bean Salad
- 1 lb. beans (Navy, Great Northern,
- 15 bean mixture)
- 1 can chopped tomatoes
- 2 to 3 stalks celery, chopped
- 1 tbsp. Chili Powder
- 1 clove garlic, minced
- 2 tsp. lemon juice
- Salt and pepper to taste
- 1 bay leaf
- Enough water to fill crock pot within 1 of top
- Discard seeds from plum tomatoes; dice tomatoes.
- Peel cucumber, leaving some green on.
- Discard seeds from cucumber; dice.
- Combine all ingredients in medium bowl.
