Oven-Braised Barbecue Brisket

  1. Preheat the oven to 325 F.
  2. Let the brisket come to room temperature.
  3. Salt and pepper the meat.
  4. In a large heavy skillet, heat the oil over moderately high heat.
  5. Brown the brisket, fat side down, for 3 to 4 minutes, or until a crust is formed.
  6. Turn and brown the other side.
  7. Place the brisket in a shallow baking pan with the chicken stock and bake for 2 hours.
  8. Coat the brisket on both sides with half of the sauce.
  9. Return to the oven and continue to bake for 2 to 3 hours, or until tender.
  10. Remove and let the brisket rest for 10 minutes before slicing.
  11. Serve with the remaining barbecue sauce.
