Bean and Orange Salad
- 1 small red onion, thinly sliced
- 1 (15 ounce) can black beans or 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (11 ounce) can mandarin orange sections, drained
- 14 cup fresh cilantro leaves
- 13 cup fresh lime juice
- salt and pepper
- Soak onion in ice water 10 minutes.
- Drain and pat dry with paper towels.
- Place in a medium bowl and add remaining ingredients.
- Toss to mix.
