Apricot Chip Cookies Recipe
- 1/2 c. sugar
- 1/2 c. packed brown sugar
- 1/2 c. butter, softened (one stick)
- 1 x egg
- 1 tsp vanilla
- 1 1/4 c. all-purpose flour
- 1 c. uncooked oats
- 1/2 c. coconut
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 c. white chocolate baking chips
- 1/2 c. minced dry apricots
- 1/2 c. macadamia nuts
- Heat oven to 375 degrees.
- Mix sugars, butter, egg, and vanilla till light and fluffy.
- Add in flour, oats, coconut, baking soda and salt.
- Mix till soft dough forms.
- Don't over mix.
- Stir in nuts, chips and apricots.
- Drop by heaping teaspoonfuls 2 inches apart.
- Bake 7 to 10 min till light golden.
- This recipe can easily be varied by changing the nuts and dry fruit.
- Mix and match dry cranberries, figs, candied orange rind or possibly lemon, and cherries with minced walnuts, almonds, cashews or possibly hazelnuts.
- Makes three dozen.
- It also can be doubled.
