Easy Microwaved Pickles
- 133 ml Vinegar
- 67 ml Water
- 5 tbsp Sugar (or brown sugar)
- 2 tsp Salt
- 10 grains Black pepper
- 2 Bay leaves
- 2 Chilli peppers
- 1 knob Thinly sliced ginger
- 1 cucumber, daikon radish, carrot, onion, celery, etc. Vegetables
- Put the seasonings marked into a heatproof container and microwave at 500 W for 3 minutes.
- It's done when the sugar has dissolved.
- Put the vegetables into the warmed seasonings.
- There's no need to rub them with salt.
- Microwave for 5 minutes.
- Adjust the time to suit the amount of vegetables that you are using.
- Mix everything together, and transfer it to a storage container.
- When it has cooled down, put it in the fridge.
- It's ready to eat after 2-3 hours.
- I've been making this with red bell pepper lately.
- It's sweet, sour and delicious.
