Tamale Pie (Mexico) Recipe

  1. Fry salt pork, add in onion and brown slightly; boil tomatoes, corn, cornmeal, and salt 5 min, stirring constantly; add in salt pork and onion, oil, chili pwdr, and hominy, stirring well, then cold.
  2. Combine egg and lowfat milk and stir into tomato-corn mix; add in olives and turn into casserole; bake covered, in moderate oven at 350 degrees about 1 hour.
