Tamale Pie (Mexico) Recipe
- 1/2 pound salt pork, diced
- 1 med. onion, sliced
- 1 can tomatoes
- 1/2 can corn
- 1/2 c. yellow cornmeal
- 1 teaspoon salt
- 1/2 c. extra virgin olive oil
- 1 tbsp. chili pwdr
- 1/2 can hominy, minced
- 1 egg, slightly beaten
- 1/2 c. lowfat milk
- 1 c. minced olives
- Fry salt pork, add in onion and brown slightly; boil tomatoes, corn, cornmeal, and salt 5 min, stirring constantly; add in salt pork and onion, oil, chili pwdr, and hominy, stirring well, then cold.
- Combine egg and lowfat milk and stir into tomato-corn mix; add in olives and turn into casserole; bake covered, in moderate oven at 350 degrees about 1 hour.
