Chocolate, Fig and Almond Truffles
- 260 g packet almond finger biscuits
- 375 g dried figs, stems discarded
- 125 g PHILADELPHIA Cream Cheese, softened
- 1 tablespoon honey
- 1 teaspoon cinnamon
- 200 g dark chocolate, melted
- 200 g white chocolate, melted
- PLACE biscuits in a food processor and process into crumbs.
- Remove.
- PROCESS figs, PHILLY, honey and cinnamon until roughly blended.
- Return crumbs and pulse until combined.
- ROLL 2 teaspoonsful of mixture into a ball.
- Repeat to make 36.
- Chill until firm.
- ROLL half the truffles in dark chocolate and half in white chocolate.
- Allow to set on paper lined trays.
- Chill until firm.
- Serve as required.
