Chocolate, Fig and Almond Truffles

  1. PLACE biscuits in a food processor and process into crumbs.
  2. Remove.
  3. PROCESS figs, PHILLY, honey and cinnamon until roughly blended.
  4. Return crumbs and pulse until combined.
  5. ROLL 2 teaspoonsful of mixture into a ball.
  6. Repeat to make 36.
  7. Chill until firm.
  8. ROLL half the truffles in dark chocolate and half in white chocolate.
  9. Allow to set on paper lined trays.
  10. Chill until firm.
  11. Serve as required.
