Sicilian Gnocchi With Broccoli
- 2 12 lbs broccoli
- 12 onion
- 2 garlic cloves
- 2 teaspoons capers
- 2 teaspoons currants
- 5 cups gnocchi
- Cut the broccoli into florets and dice the stems into bite size pieces.
- Place broccoli in a large microwave safe dish.
- Cover and nuke on high for 5 - 7 minutes.
- Drain and set aside.
- Lighlty coat a nonstick skillet with cooking spray.
- Add the chopped onion and minced garlic.
- Cook stirring over medium heat until onion becomes soft.
- Add the broccoli, cpers, dried currants, and reserved gnocchi water (if you've made the recipe same day) "recipe #rz.164220" Cook over high heat until water evaporated and the brocoli is crisp.
- Place the gnocchi in a microwave safe casserole.
- Spoon the broccoli mix on top and reheat in the microwave for 1 - 2 minutes.
- Serve immediately.
