Gluten And Dairy Free Taco Soup
- 2 Tablespoons Olive Oil
- 1 pound Ground Beef Or Turkey
- 1 whole Onion
- 1/2 whole Green Bell Pepper
- 1 clove Garlic, Minced
- 3/4 teaspoons Salt
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoons Oregano
- 1/4 teaspoons Sugar
- 1 cup Water
- 2 cups Frozen Corn
- 4 ounces, weight Chopped Green Chilies
- 1 can (15 Oz. Size) Pinto Or Kidney Beans
- 2 cans (14 Oz. Size) Diced Tomatoes
- 1.
- Chop up the onion and green bell pepper.
- 2.
- Heat about 2 Tablespoons of olive oil over medium high heat.
- Brown the beef, onion, and bell pepper until meat is browned and veggies are softened.
- Drain off fat.
- 3.
- Stir in the garlic, salt, cumin, paprika, oregano, sugar, and water.
- Taste and adjust seasonings to your liking.
- Bring to a boil.
- 4.
- Add in remaining ingredients and bring to a boil
- 5.
- Reduce heat, cover and simmer at least 30 minutes.
- Viola!
