Brie, Pear, Cranberry, and Walnut Salad
- 2 leaves Arugula or mixed greens
- 1 medium Pears
- 50 grams Brie cheese (Camembert or other white cheese)
- 1 handful Walnuts
- 1 handful Dried cranberries
- 1 1/2 tbsp Olive oil
- 1 1/2 tbsp Balsamic vinegar
- 1 tsp Lemon juice
- 1 dash Salt and pepper
- Lightly toast the walnuts.
- Combine the ingredients in a dish.
- Thinly slice the pear (peeled or unpeeled, as you like).
- Slice the cheese.
- Lightly top the arugula and pear slices with cheese.
- Add the walnuts and cranberries.
- Pour on the dressing and serve.
