Sweet Potato and Apple Latkes with Ginger Orange Dipping Sauce

  1. For Latkes:
  2. Using coarse grater blade on box grater, shred apple.
  3. Transfer to paper towels; squeeze very dry.
  4. Transfer to large bowl.
  5. Shred potato; add to apple.
  6. Mix in next 4 ingredients, then Panko and a sprinkle of black pepper.
  7. Coat bottom of large saute pan with oil; heat over medium heat.
  8. Place 1/4 cupful of the latke mix into skillet; flatten with spatula to 1/2-inch thickness.
  9. Saute until nicely golden and cooked, about 4 minutes per side.
  10. Serve warm with dipping sauce.
  11. For Ginger Orange Dipping Sauce:
  12. Puree all ingredients in a blender until smooth.
