Chewy Peanut Muesli Slice

  1. Heat glucose syrup and honey in a saucepan until boiling.
  2. Reduce heat and simmer about 5 minutes until the syrup forms a medium-hard ball when a droplet is added to cold water.
  3. Stir in the peanut butter, then remove from the heat.
  4. Stir in the rice bubbles, muesli, fruit and nuts until well combined.
  5. Press mixture into a lined 20 x 30cm tin.
  6. Allow to set at room temperature until firm.
  7. Cut in half lengthways, then across into 8 to make 16 bars.
  8. Serve.
