Guilt Free Oatmeal Cranberry Cookies
- 1 cup dried cranberries (recommended -- Craisins)
- 14 cup water
- 13 cup Egg Beaters egg substitute
- 1 tablespoon molasses
- 1 cup sugar
- 1 cup packed brown sugar
- 1 12 teaspoons vanilla extract
- 1 cup whole wheat flour
- 1 12 teaspoons baking powder
- 2 12 cups quick-cooking oats
- 12 cup nonfat dry milk powder
- 1 12 teaspoons baking powder
- 1 12 teaspoons ground cinnamon
- 12 teaspoon ground nutmeg
- In a medium bowl, combine the raisins, water, egg whites, and molasses.
- Stir until well mixed.
- Add the sugar, brown sugar, and vanilla.
- Stir to combine.
- In a small bowl, combine the flour, nonfat dry milk powder, baking powder, and cinnamon.
- Mix well.
- Slowly add the flour mixture to the raisin mixture.
- Stir in oats.
- place on parchment paper.
- Bake at 350 for 8-10 minutes or until edges are light golden-brown (I baked mine for 7.5 minutes to keep them very chewy!
