Napier

• 1 lemon wedge
• Ice
• 1 ounce sake
• 1 ounce chilled club soda
• 1 lemon twist
• 1 ounce Fennel Syrup

1. In a cocktail shaker, muddle the Fennel Syrup with the lemon wedge.
2. Add ice and the sake and shake well.
3. Strain into an ice-filled rocks glass and top with the club soda.
4. Garnish with the lemon twist.
