Bronze Dyed Pasta and Vegetable Bake With Marinade
- 500 g tri-colored pasta (bronze dyed pasta)
- 2 red bell peppers, diced
- 1 bunch spring onion, diced
- 1 red onion, diced
- 50 g italian tomato paste
- 6 tablespoons olive oil
- 6 tablespoons balsamic vinegar
- 200 g low-fat cheddar cheese
- Prepare vegetables.
- Mix all vegetables, olive oil and balsamic vinegar.
- Spread mix on baking tray.
- Sprinkle with cheese.
- Heat oven to 230C.
- Cook pasta al dente.
- While pasta is cooking, bake the vegetables in oven for about 10-15 minutes.
- Drain pasta, serve on plates.
- Serve vegetable bake on top.
