Healthy Makeover: Coleslaw
- 13 c. plain fat-free Greek yogurt
- 1/4 c. light mayonnaise
- 3 tbsp. fresh lemon juice
- 1 tbsp. spicy brown mustard
- 1/2 tsp. salt
- 1/2 tsp. Freshly ground black pepper
- 3 c. very thinly sliced red cabbage
- 3 c. very thinly sliced savoy cabbage
- 3 medium carrots
- 1 large fennel bulb
- 1 Gala or Fuji apple
- 2 green onions
- In large bowl, with wire whisk, stir together yogurt, mayonnaise, lemon juice, mustard, salt, and freshly ground black pepper.
- To same bowl, add cabbages, carrots, fennel, apple, and green onions, tossing until well combined.
- Makes about 12 cups.
