Sweet Potato, Mushroom and Cheese Frittata

  1. Heat oven to 350 degrees F.
  2. Heat oil in large ovenproof skillet on medium heat.
  3. Add onions, sweet potato and mushrooms; cook and stir 5 to 7 min.
  4. or until potatoes are tender.
  5. Meanwhile whisk eggs and milk; add cheese.
  6. Pour over sweet potato mixture.
  7. Cook over low heat 2 to 3 min.
  8. or until the edges begin to set.
  9. Bake 15 min.
  10. or until eggs are just set in centre.
  11. Remove from heat; run knife around edge of pan to loosen frittata.
  12. Let stand 10 min.
  13. Carefully slide onto serving platter.
  14. Cut into wedges to serve.
