Tortellini with Proscuitto and Peas - Tortellini della Familia

  1. Cook tortellini in 4 quarts (3775 ml) of boiling and salted water for 7 minutes (until tender) and drain.
  2. In a heavy skillet, melt butter over low heat.
  3. Add tortellini and stir to coat with butter.
  4. Add heavy cream and proscuitto.
  5. Cook mixture until cream thickens slightly.
  6. Blend in peas, parmesan cheese and pepper.
  7. Stir tortellini, stirring until cheese is melted.
  8. Serve pasta immediately with a dash of additional parmesan cheese.
