$25,000 Chili

  1. Dice and saute first 5 ingredients.
  2. Add meat and brown.
  3. Add everything else, including 1/2 can beer.
  4. (Drink the remainder, according to Annie).
  5. Add water JUST TO COVER TOP.
  6. Cook about 3 hours on low heat.
  7. Stir often.
  8. Remove bay leaves.
  9. Couple of notes: Better the 2nd day, if you can wait that long.
  10. Also, those I substitute pure New Mexico ground red chili.
  11. Whatever you use make sure it's pure chili powder, no additional seasonings added.
