Oven Baked Sausage Goulash
- 2 packages Eckridge farm skinless smoked sausages (2) in each pack. 4 all together.
- 2 can Mexican corn/ it has red and green bell pepper in it. So good!
- 1 can MILD Rotel Tomatoes, with chile
- 1 Bag- of the small golden yellow potatoes
- 1 Onion sliced into strips
- 1 Bell pepper sliced into strips
- 1 Seasonings. Whatever your faves are. I used some Cajun/Creole, Italian, and herbs, garlic, adobo, etc
- Preheat oven to 375, and slice your sausage, potatoes, onion, bell pepper
- I put my sausages in a bowl, my potatoes in my strainer, and used another bowl for my onions/bell pepper together.
- I only did this, because I added different seasonings to each.
- But you can put all in a bowl and mix all together if you want.
- Toss all around.
- I put liquid Italian dressing in all though.
- And only put the rotel in the sausage part.
- I used half a can of mild rotel.
- Layer separately (potatoes, sausage, corn) and sprinkle the onions and bell peppers on potatoes, etc in a big roasting oven pan, cover, and bake about an hour.
- Or you can mix it all up Instead of separately.
