Pumpkin Mousse Pie

  1. Combine first 6 ingredients.
  2. Set aside.
  3. Stir gelatin in boiling water until dissolved.
  4. Add apple juice, stirring well.
  5. Combine mixtures; chill for 20 minutes.
  6. Beat egg whites until stiff peaks form; fold into mixture.
  7. Mound the filling into a pie pan and chill until firm.
