Ropa Vieja
- 1 pound Flank Steak
- 2 quarts Water
- 1 whole Onion, Chopped
- 1 whole Carrot, Chopped
- 5 cloves Garlic, Crushed
- 1/2 whole Green Bell Pepper, Sliced Lengthwise
- 1- 3/4 cup Sofrito (homemade Or Canned)
- 1/2 cups Meat Broth (reserved Cooking Water)
- 1/4 cups White Cooking Wine
- 2 ounces, weight Jar Pimiento Strips
- 1/2 teaspoons Garlic Powder
- 1 pinch Salt To Taste
- 1) Boil meat in a pot with about 2 quarts water, chopped carrot, onion, crushed garlic, and green pepper for about 15 minutes.
- Reduce heat to medium-low, cover, and cook for about 2 hours or until meat can be shredded with a fork.
- 2) Remove the meat and allow to cool.
- Use 2 forks to shred the meat into thread-like strips.
- 3) Place the meat into a pan with the Sofrito, garlic powder, broth, and cooking wine.
- Salt to taste and cook for about 5 minutes.
- 4) Add the pimiento strips.
- This can be served with white rice, black beans and plantains (either the sweet or green plantains).
