Thanksgiving Cookies

  1. Cream butter, sugar, vanilla, egg, and salt until creamy.
  2. Slowly add flour and then add the cranberries, rind, and pecans.
  3. Split the dough in 1/2 and form into two bricks.
  4. Wrap in wax paper.
  5. Freeze overnight, up to a couple of days.
  6. Slice into 1/2 inch slices.
  7. Preheat oven to 350, and cook for 12 - 15 minutes.
  8. Until the edges are light brown.
