Louann's Minestrone Soup
- 1 medium onions chopped
- 3 cloves garlic minced
- 1/4 cup sherry dry
- 4 cups vegetable stock
- 28 ounces tomatoes chopped
- 15 ounces red kidney beans
- 1 1/2 tablespoons tomato paste
- 2 medium zucchini
- 1/2 pound green beans
- 1 teaspoon salt
- 2 teaspoons basil dried
- 2 teaspoons oregano dried
- 1/2 cup pasta, elbow macaroni
- In a large pot, saute the onion and garlic in the sherry until the onion is translucent, adding more sherry if needed.
- Add everything else, and bring it to a boil over medium-high heat.
- Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
