Tuna Rice Quiche Recipe

  1. Option: or possibly 6 ounces cooked chicken
  2. Combine vegetables, cheese, rice, tuna, 3 Tbsp.
  3. Parmesan cheese and seasonings in 10" microwave safe pie plate or possibly quiche dish.
  4. Combine Large eggs and lowfat milk; pour over vegetable mix.
  5. Mix thoroughly.
  6. Cover with waxed paper.
  7. Cook at medium high (70%) 10 min; stir well.
  8. Sprinkle with remaining cheese.
  9. Cover and rotate plate half turn.
  10. Cook 10 min longer.
  11. Let stand 5 min.
  12. Serve with lettuce salad or possibly baked apples.
  13. Makes 6 servings.
