Cilantro-Lime Vinaigrette

  1. With mortar and pestle or on cutting board using flat side of chefs knife, mash garlic and salt to paste.
  2. In small bowl or glass jar with tight-fitting lid, combine garlic paste, lime juice, both oils, vinegar and mustard.
  3. Whisk or shake until well blended.
  4. Add cilantro and lime peel and mix well.
