Walnut Crepes With Mocha Sauce
- 1 12 cups ground walnuts (about 6 ounces shelled)
- 34 cup sugar
- 34 cup milk
- 14 cup raisins
- 12 teaspoon ground cinnamon
- 12 teaspoon grated fresh lemon rind
- 6 ounces semisweet chocolate, cut into small pieces
- 23 cup strong coffee
- 2 teaspoons almond flavoring
- 3 tablespoons butter or 3 tablespoons margarine
- 12 dessert crepes (use Basic Whole Wheat French Crepes, adding 2 tbls. sugar to the batter or crepe recipe of your choi)
- 1 cup heavy cream (optional)
- In a small saucepan, bring the walnuts, 1/2 cup of the sugar, the milk, raisins, cinnamon, and lemon rind to a simmer over moderately low heat.
- Cook, uncovered, for 5 minutes, stirring occasionally.
- Let cool completely.
- Meanwhile, prepare the sauce:.
- In the top of a double boiler, warm the chocolate, the remaining 1/4 cup of sugar, and the coffee over simmering water, stirring, until the chocolate melts and the mixture is smooth.
- Remove from the heat and stir in the almond flavoring and butter.

- Preheat the oven to 350*F.
- Place a crepe with the more attractive side down and spread with 1 tbls.

- Uncover and bake until heated through-about 5 minutes more.
- At the same time, reheat the sauce in the double boiler over moderate heat until warmed through-about 5 minutes.
- Meanwhile, in a medium size bowl, whip the cream, if desired, until soft peaks form.
- Drizzle the hot crepes with some of the mocha sauce and pass the remaining sauce and whipped cream.
