Crunchy Iceberg Lettuce Salad with Blue Cheese Dressing
- 1 cup crumbled blue cheese (4 ounces)
- 1/4 cup sour cream
- 1/4 cup olive oil
- Salt and freshly ground black pepper to taste
- 6 cups chopped iceberg lettuce (1/2 large head)
- To make the dressing: In a small bowl, whisk together 1/4 cup of the blue cheese, the sour cream, olive oil, salt, and pepper.
- In a large bowl, combine the lettuce and the remaining 3/4 cup blue cheese.
- Toss with the dressing and serve.
