Basmati rice in beef stock
- 2 cup basmati rice
- 2 quart beef stock
- 1 quart water
- 1 1/2 cup Edamame beans
- 1 1/2 tbsp saffron oil
- 1 salt
- 1 tsp turmeric
- 7 oz vermicelli pasta, short
- 1/4 cup olive oil, extra virgin
- 1/2 tsp ground cumin
- 8 oz beef sliced thinly
- In a pot boil your beef stock
- Add your rice bring to boil add turmeric and saffron oil
- Add water and Edamame let cook add water if you need, after liquid is almost gone see how tender the rice is.
- Add more water if not done.
- In a pan add oil and stir fry the vermicelli pasta till browned add cumin.
- Add salt to taste
- I had left over beef leftover from the shooters sandwich so I sliced thinly layed it on top.
- Cover, let sit 25 -30 minutes undisturbed.
- Serve hope you enjoy!
