Cajun Style Pasta
- 3 Tablespoons Olive Oil, Divided
- 2 whole Chicken Sausage Links, Casings Removed And Cut Into 1" Slices
- 1/2 pounds Shrimp, Peeled And De-veined
- 1 Tablespoon Old Bay Seasoning
- 4 whole Servings Of Cooked Whole Wheat Spaghetti Noodles (your Preferred Serving Size)
- 4 cloves Garlic, Minced
- 1 cup Purple Onion, Diced
- 1 cup Low Sodium Chicken Stock
- 1 ear Corn, Cut Off The Cob
- 1 teaspoon Pepper
- 1/2 teaspoons Garlic Salt
- 1/4 teaspoons Crushed Red Pepper Flakes
- 1/2 teaspoons Smoked Paprika
- 1 Tablespoon Italian Seasonings
- 5- 1/2 cups Cherry Tomatoes, Cut In Half
- Garnish With Green Onions And Freshly Grated Parmesan Cheese
- In a large cast iron skillet add 1 tablespoon oil over medium high heat.
- Toss in chicken sausages and brown on each side, about 3 minutes total per side or until nicely browned.
- Remove from skillet and set aside.
- Toss shrimp with Old Bay seasoning.
- Add 1 tablespoon olive oil to the same skillet and sear shrimp.
- This should take 2 minutes on the first side, then flip and cook another 1 minute.
- Remove from skillet and set the shrimp with the chicken sausage.
- Cover and keep warm.
- Meanwhile cook pasta according to package directions.
- Add remaining 1 tablespoon olive oil to the same skillet.
- Add in onions and garlic.
- Let them bloom 2 minutes.
- Add chicken stock, corn, and the remaining spices.
- Let simmer 5 minutes.
- Add cherry tomatoes and simmer another 5 minutes.
- Add shrimp and chicken sausage back to the skillet.
- Toss pasta into the skillet and mix the whole yummy mess together.
- Top with freshly grated Parmesan cheese and green onions.
- Enjoy.
