Sausage and Green Bean Casserole

  1. Preheat oven to 425 degrees F. Microwave green beans and water in covered bowl on high 2 minutes or until bright green; drain.
  2. Meanwhile, heat olive oil in 12-inch skillet on medium-high.
  3. Add onion and Italian sausage; cook 6 minutes, stirring and breaking up sausage.
  4. Stir in beans, chopped roasted red peppers, garlic, and salt.
  5. Cook 2 minutes.
  6. Layer cooked polenta and sausage mixture in rows in 8-inch-square baking dish.
  7. Top with chicken broth and grated Parmesan.
  8. Bake 15 minutes or until hot.
  9. Top with chopped parsley.
