Broccoli Puff
- 1 large fresh head of broccoli (blanched and chopped)
- 1 cup biscuit mix
- 2 eggs
- 1 cup milk
- 1 cup cheddar cheese, shredded
- Cook and drain the broccoli and set aside.
- Measure and combine the biscuit mix, eggs and milk.
- Beat until smooth, then add the cheese.
- Next fold in the broccoli and stir well.
- Pour into a well-buttered 2 quart souffle dish.
- Bake at 325 for 1 hour.
- Serves 6.
