Smoked Sausage With Cabbage And Potatoes
- 1 pkg. Hillshire Farms smoked beef sausage
- 6 medium potatoes, peeled and cut into cubes
- 1 head cabbage (small to medium)
- 1 large onion, diced into chunks
- salt to taste
- pepper to taste
- Cut sausage into slices; set aside.
- In a skillet, over medium heat, cook onions until tender.
- Add sausage and potatoes; continue cooking until potatoes are tender, may be lightly browned.
- Remove core from cabbage and cut into bite-size pieces, but not too small. Add about 1/3 of cabbage to skillet; adding a little salt and pepper.
- Cook until cabbage becomes a little tender, turning often so potatoes and sausage do not burn.
- Move 1/2 skillet mixture to large pot to make room for rest of cabbage.
- Continue cooking until tender, removing part of mixture from skillet to pot until all of cabbage is cooked.
- Heat cabbage and sausage mixture in pot until hot.
- Serves 4.
