Easy Magic Lemon Pie
- 113 cups milk, sweetened condensed
- 1/4 cup lemon juice
- 1 each lemon grated rind
- 1/4 teaspoon lemon extract
- 2 large eggs
- 2 tablespoons sugar granulated
- 1 each pie shell (9 inch) 8 inch, baked
- Blend together Sweetened Condensed Milk, lemon juice, grated lemon rind or lemon extract and egg yolks.
- Pour into baked pie shell.
- Cover with meringue made by beating egg whites until stiff and adding sugar.
- Bake until brown in a moderate oven (350F).
- Chill before serving.
