Easy Moussaka

  1. preheat oven to 350F
  2. in a large pot fry chopped onion and garlic.
  3. add mince meat and fry till brown.
  4. add salt and pepper.
  5. add the 3 cans diced tomatoes and the tomato paste.
  6. cook for about 30 mins on low heat till sauce thickens stirring occasionally.
  7. peel potatoes and slice into very thin slices.
  8. in a deep rectangle oven dish sprinkle a thin layer of breadcrumbs on bottom then a layer of the tomato sauce.
  9. then add a layer of the sliced potatoes.
  10. add layer of tomato sauce sprinkle with breadcrumbs add second layer of sliced potatoes, layer of tomato sauce sprinkle breadcrumbs, a third layer of sliced potatoes final layer of tomato sauce with a sprinkle of breadcrumbs and generous amount of parmesan cheese.
  11. make sure each layer of sauce covers potatoes well.
  12. cover dish with foil and bake for an hour or till potatoes are soft.
  13. take out of oven and let it rest for about 15 - 20 mins before serving square size pieces.
  14. letting it rest helps the dish stay together layered in a stacked square piece and not fall apart when placing on the plate.
