Burnt Cream Recipe
- 1 pt Whipping cream
- 4 x Egg yolks
- 1/2 c. Granulated sugar
- 1 Tbsp. Vanilla extract
- 4 Tbsp. Granulated sugar to:
- 1 tsp Brown sugar
- The following is a simpler version, from Horatio's restaurant in Honolulu:
- Preheat oven to 350F.
- Heat cream over low heat till bubbles form around the edge of pan.
- Beat egg yolks and sugar together till thick, about 3 minutes.
- Gradually beat cream into egg yolks.
- Stir in vanilla and pour into 6
- (6 ounce) custard c.. Place custard c. in baking pan which has about 1/2 inch water in bottom.
- Bake till set, about 45 minutes.
- Remove custard c. from water and chill till chilled.
- Sprinkle each custard with about 2 tsp sugar blend.
- Place on top rack under broiler and cook till topping is med brown.
- Refrigeratebefore serving.
