Burnt Cream Recipe

  1. The following is a simpler version, from Horatio's restaurant in Honolulu:
  2. Preheat oven to 350F.
  3. Heat cream over low heat till bubbles form around the edge of pan.
  4. Beat egg yolks and sugar together till thick, about 3 minutes.
  5. Gradually beat cream into egg yolks.
  6. Stir in vanilla and pour into 6
  7. (6 ounce) custard c.. Place custard c. in baking pan which has about 1/2 inch water in bottom.
  8. Bake till set, about 45 minutes.
  9. Remove custard c. from water and chill till chilled.
  10. Sprinkle each custard with about 2 tsp sugar blend.
  11. Place on top rack under broiler and cook till topping is med brown.
  12. Refrigeratebefore serving.
