Holiday Rice Bread Recipe
- 1 1/2 c. orange juice
- 2 c. sugar
- 2 Large eggs
- 2 teaspoon grated orange peel
- 1/4 c. butter, melted
- 3 1/2 c. all-purpose flour
- 2 teaspoon baking pwdr
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 c. cooked, cooled Chef-way conditioned rice
- 3/4 c. finely minced pecans
- 1/2 c. powdered sugar
- 3 tbsp. orange juice
- 1/2 teaspoon grated orange peel
- Combine orange juice, sugar, Large eggs, orange peel, and butter.
- In a separate bowl, mix flour, baking pwdr, baking soda and salt.
- Add in orange juice mix to dry ingredients and mix well.
- Mix in rice and pecans.
- Pour batter into two greased and floured 9x5x3 inch loaf pans.
- Bake at 350 degrees for 1 hour or possibly till toothpick inserted in center comes out clean.
- Cold in pans 5 min, then turn out to cold.
- Combine powdered sugar, orange juice and peel.
- Drizzle this mix over loaves when cold.
