Licorice Cookies - Anise Cookies

  1. Beat sugar and eggs until light and fluffy.
  2. Stir in oil and zest.
  3. Add flour and baking powder, mixing thouroughly.
  4. Cover and refrigerate 4 hours.
  5. Roll dough to 1/4 inch thickness or a little less.
  6. Using the tine of a fork, draw lines on the dough.
  7. Cut into rectangles, place on a cookie sheet.
  8. Allow to set overnight in a cool dry place, uncovered.
  9. Bake at 375 degrees (200 C.) for 15 to 20 minutes.
  10. Do not allow to brown.
  11. Allow to cool and then store airtight.
  12. Can be eaten warm or allow flavors to blend for about 6 to 7 days.
